Sweet & Sour Hawaiian Beef
2 cups carrots chopped or diced
1/3 cup brown sugar
3 Tbsp. soy sauce
1/3 cup cider vinegar
1 Tbsp. minced garlic
1 (8-ounce) can pineapple chunks (save juice)
3 Tbsp. oil
1 pound boneless beef (preferred cut) cubed
1/2 tsp. dried red flakes
1 large onion chopped
3 Tbsp. cornstarch
1 large green & red pepper chopped
Salt and pepper to taste

In a small bowl, combine brown sugar, cider vinegar pineapple juice, soy sauce and garlic; heat oil in a skillet, brown and season beef cubes with salt and pepper; put beef in slow cooker with carrots and onions; pour juice mixture over veggies and meat; cook on high 3-4 hours until tender; dissolve cornstarch in cold water; add in cornstarch, pineapple chunks and peppers; cook 30 minute until tender; garnish with pineapple and cherries.
