Dear Mom's Corner,
Do you have any ideas for snacks for a family reunion? I'm helping to plan ours and we're tired of the same old thing.
Thanks,
Dear SL,
It is the time of year for family reunions. I'm not sure what is normally served at your reunions, but here are a couple of recipes I have found most people enjoy that are not very common.
Cream Cheese Pinwheels
Refrigerated Crescent Dough
8 oz. package cream cheese
Bacon Bits
Seasoned Salt
Soften cream cheese in microwave for about 30 seconds stir in bacon bits. I usually use about 1/2 container, but feel free to use more. Add seasoned salt to taste, or if you're watching you're salt intake, you can use seasoning like onion &garlic powder along with a bit of pepper. After the cream cheese mixture is mixed thoroughly set it aside and on a pastry cloth or lightly floured surface gently roll out the crescent dough but do not separate it. After it has been rolled out close all the holes as much as possible. It needs to be one complete piece of dough.
Gently spread the cream cheese mixture on the dough and roll it up. Next cut the dough in about one inch segments and place on a lightly greased baking sheet. Bake at 350 degrees for 10-15 minutes. These are great warm or cool. The need to be stored in the refrigerator. Variations: In the cream cheese mixture add thinly sliced green onions, parmesan cheese, etc.
Tortilla Roll-ups
10 ct. burrito tortillas
3 pkgs. cream cheese (softened)
2 cans chopped black olives
1 bunch thinly chopped green onions
11/2 shredded cheddar cheese
2 cans chopped green chilies
Plastic wrap
Mix all ingredients in bowl except tortillas. I usually use my large mixer, but it can be done by hand, too. Place one burrito on a piece of plastic wrap spread with cream cheese mixture. Next roll up the burrito and wrap with plastic wrap. Repeat with remaining burritos. Chill overnight and cut into 1/2 – 1 inch segments. Serve with salsa.
