Easy pies to warm a chilly February day

Apple Pie
3 cups sliced,
peeled apples
1 cup water
2 T margarine
2 T corn starch
1 t. cinnamon
Combine ingredients in a large saucepan, bring to a boil. Boil for three minutes. Remove from heat and cool to lukewarm. Pour into a pie crust. Bake at 350 degrees for 50 minutes.
Coconut Pie
1/2 cup flour
1 cup sugar
1/4 cup melted butter
4 eggs, well beaten
2 cups milk
1 t. vanilla
1 (7 oz.) package coconut
Combine flour and sugar in a mixing bowl. Add butter, eggs, milk and vanilla, mix well. Stir in coconut. Pour into a buttered 10-inch pie place. Put into a cold oven, turn oven to 350 degrees and bake for 45 minutes. Cool.
Apple-Banana Pudding
2 1/2 cups unsweetened
apple juice
2 bananas
5 T corn starch
Blend bananas and apple juice in a blender, add cornstarch and mix until well blended. Cook over medium heat until thickened, stirring constantly. Arrange sliced bananas in the bottom of a serving dish. Pour hot mixture over bananas. Chill until set.
