Recipes for fruits and vegetables
Squash casserole
2 tsp. butter
1 cup milk
1 cup bread crumbs
2 cups cooked mashed squash
2 eggs, beaten
1 small onion, finely chopped
1 tsp. salt
Add milk to butter and heat. Pour over bread crumbs, mix well. Pour into greased casserole dish. Bake at 350 degrees for 30 minutes or until well done.
Banana nut bread
1 cup butter
1 1/2 cup sugar
3 eggs, beaten
3 bananas, mashed
3 cups flour
1 tsp. soda
1/2 cup buttermilk
1 cup chopped nuts
Cream butter and sugar, add eggs and bananas. Mix well, add sifted, dry ingredients with buttermilk and nuts. Turn into two loaf pans. Bake at 350 degrees for 1 hour.
Sweet and sour pineapple beets
1-14 oz. can pineapple chunks
1/2 cup water
1/2 cup vinegar
3 tablespoons brown sugar
2 1/2 tablespoons flour
1/2 tsp salt
2 cans sliced beets, drained
Drain pineapple, reserve syrup. Combine syrup, water and vinegar. Stir in brown sugar, blended with flour and salt. Cook and stir for 10 minutes or until mixture boils and thickens. Add beets. Heat for a few minutes longer. Add pineapple chunks. Serve hot.
Turkey salad
2 cups chopped turkey
1/2 cup mayonnaise
1/2 cup chopped celery
2 boiled eggs
Combine all ingredients and mix well. Serve on lettuce leaves.
Craft tip: Recycle meat trays and use them for molds in making stepping stones, use earrings and jewelry you no longer wear and make a design on these stones.
You can buy the mix to make these stones at hardware stores.
Purple cow drink
1 cup grape juice
1 cup vanilla ice cream
Combine juice and ice cream and stir well. To serve, put into a glass or coffee mug.
You can use root beer instead of juice as well, to make a brown cow. These are good coolers for the hot days.
