Ole! Try this Mexican cornbread

Mexican cornbread
3 cups self-rising corn meal
1/2 cup oil
3 eggs
3 T sugar
1/2 cup shredded cheddar cheese
1 onion, chopped
1 cup whole kernel corn
1 cup milk
Mix all ingredients and bake at 375 degrees until golden brown. Makes one 9×13 inch pan of bread or can be made in a muffin tin.
This bread is good to freeze and will be ready whenever you want to serve it without taking the time to cook it later for your meal.
Sweet Potato Pie
1 14 oz. can sweet potatoes
3/4 cup milk
1 cup firmly packed brown sugar
2 eggs
1/2 tsp. ground cinnamon
1/2 tsp. salt
1 nine inch piecrust, unbaked
Preheat oven to 350 degrees. Combine sweet potatoes, milk, brown sugar, eggs, cinnamon and salt in a mixing bowl and blend until smooth. Pour into a pie crust (cover edges of pie crust with strips of foil to prevent excesses browning). Bake 40 minutes until knife inserted in center comes out clean.
Potato Pancakes
3 pounds potatoes, peeled and grated
1 onion, finely minced
3 eggs, beaten
1/2 cup dry seasoned bread crumbs
In a large bowl, combine potatoes, onion, eggs, breadcrumbs and a little salt and pepper and mix well. Drop mixture by spoonfuls into skillet with hot oil and brown on both sides.
Lemon Cake
1 box white cake mix
1 package lemon gelatin
1/2 cup cooking oil
3 eggs
1/2 cup water + 1/2 cup cold water
Stir cake mix and gelatin until well mixed. Beat in oil and eggs and 1/2 cup water until moist. Add another 1/2 cup water and beat one minute (about 300 strokes by hand).
Pour into a greased and floured 9×13 pan. Bake at 375 degrees for 30-35  minutes.
Pumpkin Pie
1 package instant vanilla pudding
1 cup canned pumpkin
1/2 cup milk
1/4 t. pumpkin pie spice
Combine all ingredients in a large bowl and beat slowly until well blended. Pour into a graham cracker pie shell. Chill for about two hours. Top with cool whip.
Chocolate Fudge Frosting
3 cups sifted powdered sugar
2 T melted butter
1 t. vanilla
2 T cocoa
Beat all ingredients until well blended, add milk a few drops at a time until frosting is of spreading consistency.
